Chocolate Chip Cookie Dough N'ice Dessert

There is something about cookie dough that just tempts the taste buds. I would be hard pressed to choose a favorite between the dough or the actual freshly baked cookie! Add ice cream to the equation and you have hit the jackpot.

Is it actually possible to create a dessert that is free of gluten, dairy, and sugar and still have it be tasty? I mean those are some big players in cookie dough, right??? Yes! This recipe nails the cookie dough taste and gives you everything you want to appease the sweet tooth craving.

Comes together quickly and has all of the beauty boosting, hormone balancing ingredients: collagen, cauliflower, and healthy fats.


1 cup almond flour

1/2 cup coconut flour

1 cup walnuts, soaked and dehydrated if possible

1/2 cup golden monk fruit

4 T ghee (can use grass fed butter if dairy free isn't necessary)

2 T ground flax

1/4 tsp vanilla

1/8 tsp cinnamon

1/8 tsp chaga (optional)

pinch of pink salt

1/4 cup stevia sweetened chocolate chips

Place all ingredients in food processor and process till smooth. Add in chocolate chips, pulse till mixed in.

Press into the bottom of your pan. Works well in silicone muffin pans, adding approximately 1 tablespoon of mix in each muffin well. Or use a 7" springform pan. Place in freezer while making n'ice cream.

Vanilla N'ice Cream:

1/2 cup cashews, soaked

1/2 can full fat coconut cream

1/2 cup riced cauliflower

1/4 cup monk fruit

1/2 Tablespoon vanilla

1 scoop vanilla collagen

1/4 teaspoon vanilla bean powder (optional)

1/4 cup stevia sweetened chocolate chips

Place cashews and coconut cream into processor. Blend till smooth. Add in the rest of ingredients and blend again till smooth. Toss in chocolate chips and pulse till mixed in. Do not over mix. Pour into muffin wells or springform pan. Place in freezer, ensuring surface is flat. Freeze till hardened.

Allow a few minutes to soften before serving.
