Make it This Weekend: Cookies & Cream Smoothie

Mmm, visions of cookies and milk dancing in your head! We are crazy about smoothies here, and making a delicious snack out of them is the way to my children's hearts. And if you can make it healthy and delicious then I am all in. Today we are going to do just that.

Believe it or not the base of the "cream" is cauliflower and coconut butter! A cacao coconut butter is best, but if you do not have a chocolate coconut butter then simply adding more cacao or cocoa and vanilla extract will work just fine. Cacao nibs blend into small chips that make up the cookie. So simple, but it works. Let's get to it!



Cookies and Cream Smoothie

serves 2


- 1 cup Milk of choice (nut milk or dairy)

- 1/4 cup cacao (chocolate) coconut butter

- 1/2 cup frozen cauliflower (riced or florets)

- dash of vanilla

- 1/8 cup cacao nibs (more or less to taste)

- 5 or 6 ice cubes


Put all ingredients in blender and blend till smooth. Top with your favorite cookie.



I personally use coconut milk kefir as the base of all of our smoothies, then top off with Unsweetened Vanilla Almond Milk. The kefir adds in probiotics without affecting the taste at all. And as general knowledge all ingredients in a smoothie can be adjusted to your taste. That is the beauty of smoothies, they are an art, not a science!

In ours I used Philosophie Coconut Magic coconut butter. It has reishi, maca, chia seed, hemp seed protein powder, and vanilla powder added making it a superfood in and of itself. So delicious! Any cacao/chocolate coconut butter could be used, also just plain coconut butter would work and add a Tablespoon of cacao or cocoa to the smoothie. Cacao is the purest form of powdered chocolate and has a higher nutritional profile. Cocoa is heated and processed with lower nutritional content, but they can be used interchangeably.

Collagen powder is another option to add. Collagen is great for skin and joint health. You could sweeten the smoothies a bit with raw honey, I add a spoonful of the Philosophie Cacao Bee Honey. It contains the same ingredients as the coconut butter and is amazingly delicious. The honey makes a fantastic add in to warm drinks, I will be sharing some of those with you as well.


The Smores Bone Broth is a seasonal item and supplies will only last so much longer. It is still available on Amazon, but do no delay if you want to purchase it, because it could run out at any time. We know that bone broth is excellent for healing the gut, boosting immunity, and skin health. I think that a vanilla or chocolate protein powder could be subbed and just increase the cacao and vanilla extract to add more flavor. I have not tried that, so let us know if you do!

Cacao nibs are crushed cacao beans, and are crunchy, flavorful, and packed with powerful nutrients, antioxidants, and fiber. Their deep dark chocolate flavor is perfect when you’re craving a chocolate treat without the indulgence factor. When mixed into smoothies it gives the effect of little bits of chocolate and loses some of the bitterness that one notices when eating them plain.

We loved the Schar gluten free chocolate grahams topping off our smoothie. These are almost like a shortbread coated in chocolate. Yep, they are just as good as they sound. You can find them here.
