Gluten Free Dairy Free Paleo Keto Low Carb Whole 30
Pick your fav, or make both! Blueberries and strawberries are chock full of nutrients and scream summer...so bring on the spring weather and make some donut holes in just minutes. Then get outside and soak up some vitamin D, safely of course!
Monk fruit sweetener is a staple in the ketogenic diet, it is used in multiple sweet treat recipes along with stevia. I suggest keeping some on hand, and of course coconut sugar is great for everyone not on the keto diet!
Ingredients

Total 20 minutes
3/4 cup almond flour or here
3/4 cup walnuts or here 1/2 cup fresh blueberries or 3 large strawberries 3 Tbs coconut flour or here 2 Tbs coconut oil melted or here 2-3 Tbs classic monkfruit* or here
If using fresh blueberries or strawberries pat dry after rinsing. Frozen blueberries can be used, they will just be more likely to turn the batter blue. (I used frozen blueberries and felt they were fine.) Strawberries need to be defrosted.
Combine all ingredients in food processor (preferred) or blender except berry of choice and process till combined without becoming too creamy from the nuts releasing their oil. Toss in blueberries or strawberries and combine just until mixed in.
Roll into 1 inch balls and place in freezer and allow to harden. Sprinkle with more monk fruit of desired.

Alternatively these can be baked:
Preheat oven to 350°F
Place all ingredients in a food processor except berry of choice and blend until combined. Add berries and pulse until just combined. If batter seems too wet add in a little more coconut flour.
Roll into round 1 inch balls, will still be a little sticky, and place on ungreased baking sheet.
Bake for about 10 minutes until firm to the touch. Sprinkle with monk fruit sugar while still warm or roll in sugar if desired.
*Use coconut sugar for non-keto
