Gluten Free Dairy Free Paleo Keto
This dish has just a few ingredients but is big on taste. Cabbage is full of vitamins and minerals, is excellent for detoxifying, and it is one of the world's healthiest foods!
Bacon gets a bad rap, but when sourced correctly, and is unprocessed and free of nitrates and nitrites, it can be a healthy source of B vitamins, plus it can lower blood sugar. Pigs cannot release toxins however, so sourcing your meat from a pasture raised non-gmo source is incredibly important. Otherwise you are eating a concentrated source of all the toxins that animal consumed. Making regular processed bacon a big NO, but finding uncured non-gmo bacon... a big YES!
Fennel has numerous antioxidants and is a source of fiber. It adds a distinct flavor that gives the dish depth particularly when paired with paprika.
Cabbage 'n Bacon
Serves 4-6

Ingredients
1 head of cabbage, chopped into 2-3 inch slices
1 package of bacon
1 small onion, chopped
4 garlic cloves, minced
1 tsp paprika
1 tsp fennel seeds
1 tsp salt
1/2 tsp pepper
1/2 cup bone broth
grease from cooked bacon
Directions:
Place parchment paper on a baking sheet and lay bacon slices on it; cook until browned in 400° F oven approximately 12-15 minutes. Save grease. Crumble bacon into bite size pieces.
Mince garlic and set aside.
In large skillet add bone broth, onion, and chopped cabbage and cook until cabbage begins to soften over medium high heat. Add salt and pepper.
Once cabbage is nearly fully cooked add garlic, the rest of the seasonings, and bacon grease. Allow to cook for 5 more minutes. When fully cooked, pull from heat and mix in bacon.
Serve warm.
