Simply Snickerdoodles

Gluten Free Dairy Free Sugar Free Low Carb Keto Paleo Whole 30


Sometimes you just need to eat a cookie that stays within the guidelines of your health journey, but also satisfies a craving. When I created these, I found they came as close as I could get to the real thing, without sacrificing my standards, as in 1 net carb per cookie! I find that these are perfect paired with a glass of unsweetened nut milk or your cup of coffee.

I hope you enjoy this indulgence as much as I did.



Simply Snickerdoodles

Makes 2 doz


Bake at 350 F for 10-12 minutes


1 cup almond flour

1/2 cup coconut flour

1/4 cup grass fed butter or ghee

1/4 cup shortening

2 eggs

1/2 cup monk fruit

1 teaspoon vanilla

1/2 teaspoon baking soda

1/4 teaspoon pink or celtic salt

1/4 teaspoon cream of tartar

additionally, but separately:

2 tablespoons monk fruit

1 teaspoon cinnamon


Preheat oven to 350 F

Combine all ingredients in mixing bowl, except additional monk fruit and cinnamon, and mix until ingredients are fully integrated.

In a separate bowl, combine additional monk fruit and cinnamon. Roll dough into 1 inch balls and coat till completely covered with cinnamon and monk fruit.

Place on baking sheet and press flat. Bake for 10 - 12 minutes. Remove from baking sheet to cooling rack. As cookies cool they will crisp up.
